In Review: TakaHisa x Sushi Sanshin

An editor from Cake The Mag was recently invited to an Omakase experience at Takahisa in collaboration with Sushi Sanshin, here’s her take.

Last night, I had the pleasure of experiencing an unforgettable dining experience at TakaHisa, where I was fortunate enough to try a collaboration with Sushi Sanshin, one of the highest-rated sushi restaurants in Osaka, Japan. This was particularly special because I had planned to visit Sushi Sanshin in Osaka last year, but due to its hard-to-get reservations, I couldn’t secure a spot. Fast forward to now, and I was finally able to experience their culinary mastery firsthand, guided by the chefs themselves in Dubai—a truly full-circle moment that made the evening even more memorable.

The menu was a journey into new flavors and textures, many of which I had never imagined trying before, including pufferfish and sea urchin. I was taken aback by how fresh, innovative, and thoughtfully crafted every dish was. The chefs’ dedication to sourcing the finest ingredients and their commitment to the precision of each dish was clear from the first bite. It wasn’t just a meal; it was an experience. Every dish felt carefully considered, showcasing the very best of what sushi could offer while pushing the boundaries of my own expectations.

What stood out most was the care and precision with which the chefs handled every ingredient. From the moment the dishes arrived at the table, it was clear that each piece of sushi was crafted with the utmost attention to detail. The chefs’ technique was flawless, and their passion for their craft was evident in every movement. It was hard not to be mesmerised as everything was done right in front of you—their meticulous actions drawing you in, almost as if they were weaving a delicate story with each piece. It felt as though each dish was a reflection of their personal commitment to excellence.

The whole dining experience celebrated the artistry of traditional Japanese sushi, refined through generations of expertise. The collaboration between Sushi Sanshin and TakaHisa brought something extraordinary to the table—an elevated twist on classic sushi that felt both timeless and innovative. Chef Yoshitaka Ishibuchi’s philosophy, grounded in the Edo-mae method and the Zen-inspired guiding principles of “Three Hearts,” was reflected in every delicate bite, ensuring that each element was in perfect harmony with the others. Chef Takashi Namekata’s expertise also added a layer of contemporary flair, blending traditional techniques with modern creativity, creating a seamless fusion of the old and new. It was clear that this wasn’t just about sushi; it was about creating a transcendent culinary journey.

This collaboration is something truly exceptional. Sushi Sanshin’s esteemed reputation, paired with TakaHisa’s commitment to excellence, created a dining experience that was both intimate and extraordinary. It felt like a once-in-a-lifetime opportunity to witness the passion and dedication of two culinary giants. Having the chance to indulge in such a remarkable sushi experience in Dubai was a dream come true.
